Chef One Kung Pao Chicken dumplings (6 pieces)
Boston Lettuce (6 leaves)
1 Cucumber sliced into matchsticks
1 Red Bell Pepper sliced into matchsticks
1 Carrot sliced into matchsticks
Cilantro
1 Lime
Sauce:
1 tsp Fish Sauce
1 x Garlic Clove, finely chopped
1 Large Shallot, finely chopped
¼ cup Soy Sauce
¼ cup Rice Vinegar
¼ cup Water
¼ cup Sugar
2 long Red Chillies, thinly sliced
Sauce: Mix fish sauce with lime, sugar, salt, water, minced garlic, chili sauce (optional if you want to be spicy) and garnish with fresh carrot
Soak the vegetables (cucumber, red pepper, and carrot) in the sauce
Cook dumplings by either steaming or pan searing (see general cooking instructions)
Place dumpling in lettuce
Add toppings and fresh cilantro
Wrap lettuce around filling and dip in sauce
